Yummy and Healthy Homemade Granola Bars!

These are so yummy and I feel super good about having them over
the store bought-filled with high fructose stuff-variety

I tried to make them less like a cookie.

Here's the recipe.
1/2 cup butter (1 cube)
1/2 cup honey
2/3 cup packed brown sugar
5 cups old fashion rolled oats
1 cup wheat germ
chocolate chips or butterscotch as mix ins.

Take the butter, honey and sugar and boil it
in a thick pan until soft ball stage...or 235* F
(I didn't use a thermometer...I just did the spoonful in the water technique)
Then pour it on top of your oats and wheat germ...
mix well.
Press the mix into the foil lined pans...
(foil makes for super easy cleanup and easy removal of granola)

I've got a little one allergic to chocolate...sad right?
So I made 2/3 with chocolate chips, and 1/3 with butterscotch
You could add any mixins you like:
coconut, raisins, craisins, yogurt dipped things,
nuts (I've got one with nut allergies too)
and whatever you can think of!
If you add large quantities of nuts, take out the same amount of oats.

I sprinkled the mix ins on top and pressed them into the bars.
They melted, but it's cool like that.
sweet in every bite!

Then stick the pan in the fridge for about 20 minutes.
Pull out the foil and put it upside down on your cutting board.
Take off the foil and cut the bars.
(see how I cut them...with a little taster strip on the side?)

Wrap them up in some plastic wrap...store in airtight container!
Don't refrigerate...or they will become hard. Stays chewy 
and nice for about 3 weeks...if they last that long!!

Great for school lunches!

And because I had a little "taster" strip...I let my no chocolate guy try it out!

Yep. Huge success!
